Now here I am at the reclaimed land.
As I researched, this area was form from the 50's – 60's.
The reclaimed land is growing prosperous and flourishing.
More and more houses, shopping malls are built.
Follow me to discover reclaimed land of Rach Gia city.
There are so many delicious dish in Kien Giang.
But only one dish, extremely famous is herring fish salad.
People claim its origin in Phu Quoc.
And in Rach Gia as well.
Even in Ha Tien.
But I can say, herring salad is the specialty of Kien Giang.
I asked the local why, and they told me herring fish live in herd, very crowded.
They can do nothing but make salad.
They extract the fish fillet and throw away the bones and fish head.
Then squeeze lime, and done.
Herring salad is the most special dish of Kien Giang, and Rach Gia.
Visitors must try herring salad when coming there.
Enjoy it with sea view and sea wind, from the seaside restaurant.
Especially, a chef will cook directly in front of your table.

The sweetness can be adjusted depends on regions, but Kien Giang people like more sugar.
The different ingredient in this sauce is kumquat, in stead of lime.
Add coriander.
Then onion.
It smells so good.
Grated coconut is dispensable.
More or less if you want.
Then roasted coconut.
Salted soybean, and coconut milk.
Minced garlic.
So attractive.
Instantly done after 5 minutes.
We finished herring salad.

Nguyen Trung Truc was the initiator of the very popular anti-aggression movement at that time.
He made many illustrious feat of arms as if he had burned a huge enemy ship.
And today, right here is a temple to worship him in the town of Rach Gia at that time also the city of Rach Gia now.
Not only in Rach Gia, temples to worship Nguyen Trung Truc now are everywhere in Nam Ky provinces.

The whole making process will be monitored and controlled by computer.

Tuan Anh, I think the room with those pots will be responsible for cooking the ingredients.
Which include rice and stuff, and after cooking it, the rice will be finely ground and we will mix them together.
When we're done, we will separate the trashes which are called "hèm", we'll begin water extraction process.
Then we will brew it with hops to add flavor.
After that, we'll bring them to other place.
We'll start inserting the yeast for fermentation.
Which place?Not here, right? How many liters each tank can hold? About 165.

It means after filling inside the bottle, it's not cold anymore.

This process will reduce enzyme reactions so we can keep our beer fresh for longer.

From this stage, we will have another.
And after that, we will bottle it up.
This is the machine used for checking whether our beer is clean or not.
Whether it still contain something or not.
If it still has label, it will return to the water filter.
The qualified bottle will be moved to extractor.
This dirty bottle will be put in the washing machine in order to check if it function normally or not.
Every workers will have to check this bottle.
That's why we know our machine always work well.
Even a little dirt on the bottle is considered unqualified.
This machine will remove those dirty or broken model.
Not in the line anymore.
This is extractor, and this is entrance.
After coming out, it will be fully extracted and bottled up.
When the bottles are passing through, it will be filled up with beer and covered by the lids.
That's right!This is called self-contained process, without anyone or anything else becoming involved.
Those bottle has been extracted is still cold.
Wow, it's cold.
Those bottle will go into pasteurization machine.
Pasteurization?What is its function? It will improve with better preservation and storage.
After refined process, there're still some enzymes left in the bottle.
Enzymes from the yeast.
That's right! When those bottles go through this, the machine will neutralize the enzyme so that the beer will stop its fermentation.
It ends fermentation, so we can improve with better preservation.
After pasteurization, we will go to the next stage, where the bottles will be labeled.
It's beer label.
The bottles are labeled when passing through.
After going through this machine, those bottled will be fully labeled.
This extractor will produce 30.

– Those are beer crates!-Yes! How long does it take for this finished product? From beginning to this final stage will take 1 hour 45 minutes.

It's a good idea to open the bottle, pour the beer into the glass and drink it right then! Or not, put it in the fridge, wait for 15 minutes and savour the beer.

The cans are new, so we just need to fill them with beer and seal the cans! Those are empty can, delivered from the manufacturer in full cover.
Through this machine, each one will be dissolved and after that, the can will be moved to extractor.
After extracting, the can will be moved to this machine and get sealed.
So now they are extracted? But how can they extracted without overflowing broth? This machine is imported from Germany! It's high-tech machine with pressure system to capture CO2 inside so that the broth won't be formed.
That sounds interesting! Even the can's filled to the brim, it won't pour.
What a high-tech machine! Let me introduce our machine.
This will check whether every can are filled with the beer.
If the beer's not filled to the brim, the can will be unqualified.
Those are unqualified cans.

He said those fish were swimming in the water which is released from the factory.
The water must be very clean and clear that the fish can survive under the water.
– Is that right?- Yes! How many cubic meters of water the factory releases each day? 1000 cubic meters each day.
Because according to our criteria of traditional Saigon Beer, we have to conserve our environment in the future.
Every effort being made are for the future.
That's right! For instance, what about other types of trash? Will it be thrown away or not? Those trash will be turned in to fertilizers and be made use of planting vegetables right inside our factory.
– It's kinda like a garden!_ What? Clean argiculture in Saigon – Kien Giang Beer brewery.
You mean we use wort which is filtered in beer production process to plant trees.
All of them become fertilizer.
It's interesting.

My feet are tired.
Earlier I said that it was the park of Saigon – Kien Giang Beer brewery, it was a joke.
It was where they released water to raise fish for a pilot project.
Here is the real park.
